Lightly oil outside of chicken and sprinkle salt & pepper inside cavity and on the outside skin. Place chicken breast side up in clay pot and fill cavity of chicken with onion, garlic, parsley, fresh rosemary, and oil. Sprinkle paprika on top of chicken. Cover and put in a cold oven.
Steps to make Clay Pot Chicken:
- Soak clay-pot in water 2 hours. Chop the carrots. Add the lotus bulbs, woodears, and carrots to the bottom of clay-pot.
- Add salt to the vegetables, to the inside and outside of both chickens. Put the chickens on top of vegetables
- Mix the the wine, sherry wine vinegar, and sesame oil.
- Pour the wine mixture on the chicken. Pour the water in the pot.
- Put claypot into cold oven. Turn oven to 325 degrees Fahrenheit.
- Cook till done. There will be a lot of broth.
- Remove chicken bones and strain the broth, check for tiny bones. Add vegetables back to chicken.

- Servings are based on 2 pieces of chicken each. These are small chickens about 3 pounds each. The chicken will fall off the bone.
