- Prepare 2 tsp poppy seed paste

- Prepare 1 tbsp coriander chopped

Stir in cilantro and serve the chicken over rice with Naan on the side. Malwani masala is a fusion of various aromatic Indian spices. It includes dry coconut, dry red chilli, coriander seeds (dhania), cumin seeds (jeera), shahi jeera, black peppercorn, poppy seeds (khus khus), black and green cardamoms and cloves. All these spices are dry roasted together and ground into a fine powdered spice mix.
Steps to make Khus Masala Coconut Chicken:
- Marinate chicken with little salt and set aside for 15 minutes.Heat oil and fry chopped onion till crispy brown.Grate coconut.Soak few cashewnuts and poppy seeds in warm water for 20 minutes.Grind to a paste alongwith curd,malai,fried onion,ginger garlic paste,green chilli and fennel seed powder.Lightly fry the chicken.Set aside.
- Add half crushed whole garam masala.When they crackle fry dry red chilli and set aside.Now add the ground masala, coconut,salt and sugar to taste.Add the chicken and toss.Now add 1.5 cups water and cook till chicken is done and gravy thickens.Sprinkle garam masala,ghee and chopped coriander.Garnish with chopped cashewnuts,dry red chilli and green and red chillies.Serve hot with pulao,roti or naan.
