  3. Prepare 1 tsp lemon juice

  7. Take 1 tbsp Red Chilli Powder
  8. Take 2 tbsp Poppy Seeds(soaked in milk and paste)

  10. Prepare 1 tablespoon Garam Masala
  11. Make ready 1 Star Anise
  12. Prepare 1 inch Cinnamon stick
  13. Prepare 1 cup Thick Coconut milk
  14. Take As needed Coriander leaves (chopped)
  15. Take To taste Salt
  16. Get 2 tablespoon Refined Oil
  17. Make ready 3 Green Chilli
  18. Take 1 inch Ginger
  19. Get 6 cloves Garlic

A crazy addictive Coconut Chicken Curry made with a rich coconut creamy sauce, chicken, potatoes, eggplant and topped with fresh basil and freshly squeezed lime juice!

Instructions to make Coconut Chicken Curry:
  1. Make a fine paste of green chilli,garlic and ginger. Keep it.
  2. Marinate chicken with curd, coriander powder,turmeric powder,lemon juice,plus 1 spn paste of green chilli, ginger and garlic. Keep it in cool place for about 2 to 3 hours.
  3. Heat oil in a heavy bottom pan add star anise,cinnamon stick and cumin seeds when crackle add chopped onions and fry it till the onions turn to golden in colour then and the left over green chilli and ginger garlic paste and saute it for about 2 to 3 mins. Then add Red chilli powder to it.
  4. Now time to add marinated chicken to it and saute it for 5 mins on high flame. Then reduce the heat.
  5. Add poppy seed paste to it and saute it and cover it and cook for 10 mins. Now uncover it stir it well on high flame(till oil seperates). Again cover it and reduce flame and let it cook for another 15 mins or till the chicken is done.
  6. Finally add garam masala and mix it well. Then add coconut milk and cook it for 5 mins on low flame with tym to tym stir. A beautiful red colour gravy will give the wonderful aroma.
  7. Curry is done, serve it in a bowl garnish with coriander leaves
  8. This curry go well with appams..(a rice flour soft dosa.)
