Bhujing is a process of roasting chicken with potatoes on charcoal and then mixing it with flattened rice( poha) and a magical masalas. Grind curd-coriander-pudina-ginger-garlic, add salt and make a thick paste.

The ingredients needed to make Chicken Poha Bhujing:
- Prepare 1 kg chicken
- Make ready 4 medium size potatoes cut in roundels
- Take 3 finely sliced onions
- Get 300 gms thin poha
- Take As required Oil
- Prepare As required Salt
- Prepare As required Lime
- Prepare For Chicken marination:
- Take 1/2 tbsp turmeric powder
- Get 1.5 tbsp Jeera / cumin seeds
- Get 1.5tbps coriander seeds
- Make ready As required Salt
- Prepare For Magical Masala:
- Get 10 Garlic Cloves
- Make ready 4 Green Chillis
- Prepare 6 Cardamon
- Prepare 2 pieces cinnamon each of 1 inch
- Get 8-10 black pepper corn
- Get 4-6 cloves
- Take 3/4 cup roasted dry coconut
- Take 1/4 cup coriander leaves
A famous street food from Virar. Make a mixture of Coriander powder, cumin powder, salt & turmeric. Apply this to the pieces of potatoes & boneless chicken pieces and grill them. For more flavor, when the pieces are half done, remove them from the grill & fry them in oil.
Steps to make Chicken Poha Bhujing:
- Grind the coriander and jeera seeds, add turmeric and salt mix it well.
- Marinate the chicken with this mixture and leave it aside for minimum of 1 hour. (I prefer to refrigerate it overnight)
- Prepare the magical masala by 1 st grinding cloves, cinnamon, cardamom and black pepper to a coarse, don't add water.. Now add garlic, green chillis and roasted coconut and pulse it coarse. Keep it aside.
- After an hour put the chicken and potatoes on the skewers and grill it.. I grilled it in an oven for around 40 minutes at 200 C. It's should not be fully cooked as we will be cooking it further in the pan. Additionally, I covered the skewers with foil paper,. This helps retain the moisture in the chicken.
- Take a wide bottom pan.. Add oil.. Once the oil is hot add sliced onions and cook till slightly golden brown.
- Add the chicken and potatoes and give it a nice mix. Add around 2 tbps of water to it. Cover the pan and let it cook for 10 minutes.
- Now add the magical masala, mix it well..add coriander and let it cook with the chicken for 5 minutes.
- Add the poha, mix it well..cover it with a plate filled with water and let it cook for around 8-10 minutes.
- Chicken poha bhuijing is ready. you can serve it with a dash of lime.
