  1. Prepare 500 gm chicken
  2. Take 5-6 shallots
  3. Take to taste salt
  4. Take as needed oil
  5. Get 1 inch ginger
  6. Get 8-10 garlic cloves
  7. Prepare 1 tbsp fennel seeds
  8. Make ready 1/2 cup chopped coriander leaves
  9. Take 2 tsp Curry leaves
  10. Get 1/2 cup grated coconut
  11. Take 1/2 tsp turmeric powder
  12. Make ready 1 tsp coriander powder
  13. Prepare 1 tbsp meat masala
  14. Prepare 3-5 green chillies
  15. Get 1 tbsp white vinegar
  16. Prepare 1 tbsp rice flour or corn flour (optional)

Transfer chicken mixture to clean bowl. This spicy chicken stir-fry is perfection. With chicken, scallions, bamboo shoots, and a sauce that goes great over rice, you'll want to make it every week! This is a sweet and spicy version - made using sweet chili sauce, chilies and brown sugar.

Steps to make Sour and spicy chicken fry:
  1. Chicken 500 gm boneless/ non boneless - First marination - add salt and squeeze lemon juice and rest it for 15 min. This step is important because it allows salt to penetrate deep inside so that the chicken don't taste blanch inside.
  2. Second marination - In a blender, add 8-10 cloves of garlic, 3 to 5 green chilli(you can adjust according to your spice threshold), ginger, 5 to 6 shallots or 1 onion, half cup coriander leaves,curry leaves, half teaspoon turmeric, 1 tbsp meat masala and add half cup grated coconut and blend it to a nice thick paste.
  3. Make sure you squeeze excess water from the chicken before mixing it with this paste, you can add 1 tablespoon vinegar or lemon juice and a tablespoon of rice flour or corn starch as it will make it crispy and keep it in the fridge for a minimum 15min, more the merrier.
  4. Frying instruction - Cook the chicken on high flame for straight 2 min on one side and flip it,then cook it for another 15 min on low flame this method will ensure chicken retains all the juices and when served it is soft and tender.

Or try adding pineapple chunks and juice, a little malt vinegar and an extra squirt of ketchup for a quick sweet and sour stir fry. Pile in the veggies and watch the kids eat them up with no complaints. Next, deep fry the chicken and stir fry with the sweet sour sauce. Stir-fry until you smell the aroma. Add the sweet and sour sauce into the wok and bring it to boil.
