Instructions to make Thai Chicken:
    1. Heat oil in large pan.
    1. wash chicken breasts and pat dry. lightly salt & pepper with coarse s&p
    1. brown chicken on both sides and remove to plate.
    1. Add the sliced peppers and chopped onions into same pan and stir fry until translucent.
    1. Meanwhile, cut up the browned chicken breasts into bite-sized pieces.
    1. in a saucepan, pour the can of light coconut milk into pan wit 2-3 Tablespoons of red chili paste or more to taste. heat on low. Stir well.
    1. Add bite sized chicken bites to pepper and onion mixture. Pour the light coconut mixture over the chicken. Mix well.Turn to low and cover for about 10-15 min so all the flavors mix well together.
    1. serve with brown or white or Jasmine rice on the side.
