Serve along with salad, rice and chilli dips. Blend peppers, chiles, lime leaves, shallots, tomatoes, sugar, paprika, shrimp paste and salt into a chunky paste in a food processor.

- Simer chicken with Coconut water and other ingredients until the water has almost evaporated and the chicken is tender.
- Add water necessary. Drain and allow to cool. Deep fry chicken in hot oil until golden brown. Set aside. Brush chicken with the remaining sauce to give it a shine.
