Instructions to make Chinthamani Chicken:
- Clean the country chicken and cut them into a medium size pieces.
- Chop the shallots into two halves and chop the coconut into small pieces.
- Remove the seeds from the red chilies and use the red chilies
- Heat Gingelly oil in a Kadai, add mustard seeds and once it starts to crackle and shutter and then add the shallots
- Saute the shallots for a minute or two and then add red chilies and curry leaves.
- Once the shallots turns translucent in colour add the chicken pieces and ginger garlic paste
- Add the turmeric powder and salt. mix it once and close it with a lid and cook for 5 minutes in medium flame
- After 5 minutes, the chicken will release water and you can stir and cook it for few minutes.
- Keep stirring occasionally and cook the chicken in a medium flame for 20-25 minutes
- Add the coconut pieces mix it once and then cook for a few minutes and serve it hot.
- Note - you can add 2 tbsp water if you feel that water is less. Add one tsp gingelly oil after adding coconut pieces if needed.
