- Wash and season chicken to taste. Let chicken marinate.
- Heat pot and put in the oil then sugar. Stir sugar in oil, when the sugar is brown and bubbly drop the meat in. Stir let the meat get covered in the browning, put the fire low and let it get a nice brown color.
- Mix your powdered coconut milk with a cup of water and put it in the pot. Let meat simmer for ten minutes then add pigeon peas, corn, carrots and pumpkin let simmer for ten minutes.
- Add all purpose seasoning, salt and pepper sauce to taste and a few squirts of ketchup. Stir in a cup of rice, add water to cover rice, cover pot and let simmer till the rice is cooked. Stir every five minutes so the rice won't stick at the bottom of the pot.
- If you find your rice isn't brown enough you can add a little soy sauce for color.
