- Make ready 5 tablespoons oil (coconut oil)
- Take 100 gram young cassava leaves
- Make ready 1 chicken (about 1 and half kg)

- Prepare 5 red chillies
- Get 7 bird's eye chilies
- Make ready 5 candlenuts, roasted
- Take 2 big shallots
- Take 1 teaspoon dried shrimp paste
- Take 5 cloves garlic
- Take 1 tablespoon coriander, roasted
- Take 2 tablespoon chopped lemon grass
- Make ready 2 teaspoon peppercorns
- Take 1 tablespoon chopped galangel
- Prepare 2 cm fresh turmeric (or 1 teaspoon powder)
- Take 1/2 teaspoon nutmeg powdered
- Take 5 kafir lime leaves
- Prepare 2 teaspoon chopped ginger
- Take 2 teaspoon chopped lesser galangel
- Prepare Salt and sugar

This recipe was modified from my cookbook that I brought from Indonesia, Hidangan Ayam ala Resto by Sufi S. In that cookbook, I saw a recipe Bebek Betutu which Bebek means duck in bahasa Indonesia.
Instructions to make Ayam betutu (spicy grilled chicken):
- Heat oil and saute the ground spices until fragrant and dry. Set aside and allow to cool.
- Divide two parts. Combine 1 parts with cassava leaves.
- Stuff the mixture into the chicken and secure with toothpick or cooking string.
- Rub the chicken and with banana leaves (I use turmeric leaves because I don't have banana leaves) and tie with a string.
- Grilled in the oven at medium heat (180 °C) for about 2 - 3 hours or until cooked. Remove from heat and cut before serving.
- Note : I steam the chicken first about 45 minutes before grilling in the oven for 2 hours. Happy cooking 😍
I modified by using chicken instead. Massage chicken with betutu spice mix. Season with salt and pepper and tamarind water. Wrap chicken completely with banana leaves or greased parchment paper and then foil. Nasi campur Bali with ayam betutu.
