Cook the shallot in oil in a dutch oven. Add in the chicken and sauté, then stir in the curry paste. Pour in the coconut milk and stir in the lime leaves, sugar and fish sauce. Add in the red pepper and cook until tender.

- Cut the meat and vegetables into bite-size pieces.
- Cut tofu into bite-size pieces.
- Chop the cilantro.
- Heat oil in a large skillet on medium heat. Add the curry paste, stir fry 1 minute or until fragrant.
- Stir in the meat and vegetables and cook for 3 minutes or until the meat is cooked through.
- Add coconut milk and water.
- Add chicken bouillon, brown sugar and tofu and simmer about 5 minutes.
- Add fish sauce.
- Add chopped cilantro and it is ready to serve with steamed Jasmine rice!
Combine the first five ingredients in a large skillet. Stir in vegetables; return to a boil. This Thai Red Chicken Curry is incredibly delicious, so easy to make with bite size chicken pieces, snow peas and simmered in a red curry and coconut milk sauce. Make this with store bought curry paste (we give it a freshness boost) OR homemade red curry paste (the fresh flavour can't be beaten!). Make up the chicken stock in a measuring jug and add the fish sauce, demerara sugar, lemongrass paste, coriander paste, tumeric and kaffir lime leaves.
