  14. Prepare Salt to taste (4g or less)
  15. Prepare Optional;

  18. Make ready 3 pods Cardamom

Put the chicken into the pan, cook it with the sauce until the chicken's meat soft and done. Then leak the chicken and put it away. Continue to cook the sauce until it thick. Then pour the vinegar into the sauce, stir it.

Instructions to make Chicken Gulai:
  1. Blend shallots, garlic, dried chilies, ginger, galangal, turmeric and lemongrass into a paste.
  2. Add oil to wok and heat up until hot. (Fry the cinnamon, cardamom and star anise here). Fry the paste until the oil separates. Add chicken and cook well (about 5 minutes both sides).
  3. Add the coconut milk, tamarind slices and salt and palm sugar. Cook until the liquid is reduced to a desired consistency or until dry.
